  12. 50 gm Sev/Alu Bhujia/Jhuri Bhaja

Steps to make to make Kolkata's Street-Style Sev Papri-Chaat | Indian Delicacy

  1. Making of Homemade Chaat/Flat Puri:
  2. Add 1 cup of Semolina/Suji/Sooji with 1 cup of All-purpose flour (Maida)/Wheat flour (Chakki Atta) and knead a soft dough exactly that of Chappati or Roti (this step is important as Semolina or Sooji consumes a lot of water).
  3. Up next, take a rolling pin and make a thin platter Platter-like shape out of the kneaded dough. N.B. (IMPORTANT): Remember, the platter has to be uniformly thin for best end-results (I.e., for Papris to be crispy)).
  4. Thereafter, take a cookie-cutter or in case it is not available with you at the moment, take a container-cap (maximum 5 cms in diameter) with a sharp edge so as to cut through the flattened kneaded platter and cut out uniform disks. Do not dust with flour much as it will fall in oil
  5. N.B.: It is very crucial to prick each Papri disc with a knife or a fork to ensure the passage of air as without pricking would turn each disc into a swollen Puri/Fuchka/Gol Gappe instead of a proper flat Papri.
  6. N.B. (IMPORTANT): Remember, it is very important to cook the discs in medium-high flame interchangeably for that perfect Papri colour and texture.
  7. Now, take a medium-sized wok/Kadai and heat enough of cooking oil of your choice in high flame. Now pour in one disc at a time and immediately put in little pressure for it to swell upwards. Repeat for each subsequent ones. Put each into a tissue paper for the soaking of excess oil once they turn golden in colour. Set aside to cool.
  8. Making of the Chaat Potato & Spice-topping:
  9. Firstly smash the boiled potato without turning it to a complete paste.
  10. Thereafter, heat a wok/Kadai with 3 tsp of your choice of cooking oil. Once it oozes, add chopped Onions and stir until translucent.
  11. Up next, add the smashed potato mixture and stir for another 1 minute.
  12. Next, add Coriander powder to the mixture and keep stirring for 1 more minute.
  13. Now, add the Red Chilli powder and stir for 1 + 1/2 minutes.
  14. Thereafter, add the MOST IMPORTANT INGREDIENT OF THIS RECIPE, which is the CHAAT MASALA to the mixture. Stir for a minute till you get that aromatic Chaat essence.
  15. Now, add 1 tsp each of Tadka + Chana Masale and stir continuously for 2-3 minutes until you get that perfect texture.
  16. Once done, kill the heat and set aside to cool.
  17. Once every ingredient has cooled down completely, take a plate and in it decorate with Papris all around the circumference. Next, add the spicy potato mixture right in the middle of the plate as shown in the picture.
