  3. 1 tsp salt
  4. 1/2 tsp turmeric powder

Steps to make to make Nylon Sev Khamani

  1. Take a mixture grinder jar add gram flour, sugar 1/4 cup, salt, turmeric, citric acid,hing and grind it till sugar and citric acid mix with flour.
  2. Now take a mixture in a bowl add cornflour then mix it well.
  3. Now add water 1 cup in better and mix it with hand bitter or spoon in one direction. There should not be any lumps in it. Then add 2 tbsp oil and mix well. Then rest it for 15- 20 mins.
  4. After 20 min again mix the better well in one direction for a few mins. Till then put on gas flame and add water in the steamer and wait till it starts the boil. Grease dhokla mould with oil.
  5. Now in the khaman better add 1 tbsp baking soda pour 1 tsp water on it to activate soda. Mix it well. You can see that better become double. Then pour the better in dhokla mould and let them steam for 15- 20 min in the steamer.
  6. After 15 min check khan with knife or tooth pic. If it sticks on it then let them steam for another 5-10 mins. After that take mould out of the steamer and let them cool down at normal temperature till 1 hour.
  7. After it cools down completely mess the nylon khaman with hand in fine crumbles.
  8. Now for tadka in a pan heat 1.5 tbsp oil. Then add cumin and mustard seeds. Then add curry leaves and pinch of hing and sesame seeds. Then add 1/2 cup water in it. Now add sugar and let it boil till sugar dissolves it into the water.
  9. Now pour tadka in the khaman mixture. And mix well. Khamani is ready to serve.
  10. Now in serving plate take a Khamani garnish it with coconut powder, dry fruit kismiss, nylon sev namkin, chat powder, promganet and coriander.
