  8. 1 tsp Fruit Salt or Eno
  9. Tempering :
  10. 2 tbsp Oil
  11. 2 tsp Mustard Seeds
  12. as required Few curry leaves
  13. Pinch Hing
  14. 1 tsp Sugar
  15. 1/4 cup Water
  16. as required Chopped Fresh Green Coriander leaves

Instructions to make to make Khaman !!

  1. Take besan, rava, sugar, ginger green chilli paste, salt and turmeric powder in a mixing bowl and mix well. Gradually add water to make thick flowing consistency batter. Make sure no lumps are there in batter.
  2. Whisk well batter in one direction for 8 to 10 mins till it turns light and fluffy.
  3. Meanwhile keep the water in steamer to boil on low flame. Once water starts boiling, add fruit salt to the prepared batter, pour very little water on it and immediately whisk vigorously in one direction and pour the batter in the greased plate or mould.
  4. Keep the plate or mould in steamer and steam it for 10 to 12 mins on medium to high flame. Check with the help of a knife or toothpick. If it comes out clean then it is done else steam for few more mins.
  5. Switch off the flame. Remove from steamer and let it cool down. Once cooled cut in desired shape.
  6. Tempering - Heat oil in a tadka pan. Add mustard seeds, hing, curry leaves and sugar. Let it splutter and carefully add water. Pour the tempering on prepared khaman. Keep aside for sometimes.
  7. Garnish with chopped fresh green coriander leaves and serve with green chutney.
